When making eight-treasure rice, I never care about which or how many kinds of grains to use. I just put whatever is available at hand, such as peanuts, mung beans, red beans, coix seeds, raisins, etc., together with rice and steam them. It's just for the sake of good looks and good luck.

Here is the traditional way to prepare "Eight Treasure Rice", a traditional dish for the Chinese New Year:

 

Ingredients

 

• Main ingredient: 2 cups of glutinous rice, appropriate amount of red bean paste.

 

• Seasonings: Half a bowl of lard or vegetable oil, half a bowl of sugar, appropriate amount of dried fruits and candied fruits like Chinese dates, walnuts, raisins, lotus seeds, longan pulp, melon seeds, and green and red shreds.

 

Preparation Steps

 

1. Soak the rice: Wash the glutinous rice thoroughly and soak it in clean water for at least 3 hours, preferably overnight. Change the water 1-2 times during soaking.

 

2. Steam the rice: Drain the soaked glutinous rice and put it in a steamer. Steam it for 20-30 minutes until cooked.

 

3. Mix the rice: Pour the steamed glutinous rice into a basin while it's still hot. Add an appropriate amount of sugar and lard, and stir well to make sure each grain of glutinous rice is coated with oil and sugar, making it shiny and glutinous.

 

4. Prepare the bowl: Take a large or small bowl and evenly coat the bottom and walls of the bowl with a layer of lard to facilitate demolding later.

 

5. Arrange the ingredients: Arrange dried fruits and candied fruits such as Chinese dates, walnuts, raisins, lotus seeds, longan pulp and melon seeds on the bottom of the bowl according to your favorite patterns and shapes.

 

6. Lay the rice and add the filling: First, spread a layer of the mixed glutinous rice and gently press it down with a spoon. Then put an appropriate amount of red bean paste in the middle, press the red bean paste into a flat shape. Next, cover the red bean paste with the remaining glutinous rice, filling the bowl and pressing it firmly.

 

7. Steam to set the shape: Put the bowl with the Eight Treasure Rice in the steamer and steam for 15-20 minutes to let the rice be fully heated, so that the aroma of the dried fruits and candied fruits penetrates into the glutinous rice and the red bean paste filling becomes more soft and glutinous.

 

8. Demold and serve: Take out the bowl after steaming and let it cool slightly. Then place a plate upside down on the bowl and quickly turn it over to invert the Eight Treasure Rice onto the plate. Garnish with green and red shreds and it's ready to serve.
